Mexican Hamburger Macaroni Casserole

8 oz elbow noodles (half a box)         

1 pound lean ground beef                  

½ cup onion

1 can black beans (rinsed/drained)    

1 can diced tomatoes (14.5oz)           

1 cup corn                  

1 cup thick’n chunky salsa                 

1 pkg taco seasoning mix                  

2 cups shredded Jack Cheese (or Mexcian 3 cheese blend)                          

½ cup sour cream

Prepare pasta according to direction.  In a large skillet brok beef and onion until no pink and drain.  Stir in black beans, tomatoes, corn, salsa and taco seasoning.  Bring to a bil, reduct and heat and simmer 5 minutes.  Stir in 1 cup cheese, sour cream and pasta.  Pour into casserole and top with remaining cheese.  Heat in 350 degree oven until hot and bubbley
