Oven Fried Chicken

Chicken fryer parts (approximately 3 pounds)

2 cups Bisquick *

1 tsp. Salt

½ tsp. Pepper

1 tsp. Garlic powder

½ tsp. Poultry seasoning or sage

1 tsp. Paprika

¼ – ½ cup cooking oil (enough to generously coat bottom of pan)

 

Preheat oven 425°.  Rinse chicken parts, set aside.  Mix all dry ingredients together in a large bowl.  Coat each piece of chicken with Bisquick mix.  In a large metal baking pan coat bottom with oil.  Place coated chicken in pan, skin side down.  Bake in over 15 minutes.  Turn chicken skin side up and turn oven down to 350°.  Continue to bake till chicken is done (30-40 minutes).  Remove chicken from pan.  Pour 3 cups water (potato water) into drippings, and stir to loosen crusty drippings, if a lot of lumpy crust, strain drippings and water into a saucepan.  Thicken with cornstarch for gravy.  May need to increase Bisquick and seasoning depending on size of chicken pieces (make recipe and a half)
