Campground Irene’s Scalloped Pineapple

2 large can crushed pineapple, drained

1 large can pineapple chunks drained

2 sticks butter melted

1 cup sugar packed brown sugar

1 cup white sugar

8 eggs

Whole loaf of potato bread,(about 16 slices) cubed (white break is OK too)


In a large bowl add melted butter add sugar and eggs, blend with mixes.  Stir in pineapple then fold in cubed bread till it soaks up the liquid mixture.  Pour into Pam sprayed 9 x 13 baking dish or pan

Take cubed pineapple and arrange on top of bread mixture then poke down into mixture.  This can be made up a day ahead, cover with plastic wrap and left in refrigerator and bake the next day.  Bake @ 350° 50 – 60 minutes until golden brown on top.


*You can also stir in a teaspoon of cinnamon to the butter/egg/sugar mixture before adding bread for a nice favor.  This dish can be served as a side dish or dessert with vanilla ice cream
