Homemade Vegetable Soup

1 pound beef cubes cut into small pieces

1 large bag frozen mixed vegetables

2 large cans whole tomatoes

1/4 head cabbage

3 potatoes – diced

1 large onion diced

2 tsp salt

1/2 tsp pepper

1 tsp garlic powder



Heat 2 tblsp oil in large stock pot.  Add beef cubes and quickly brown.  Add onion and stir till onion till translucent.  Add tomatoes and crush to break up tomatoes.  Add all other ingredients.  Bring to a boil; reduce heat; cover and simmer 1 – 2 hours.  Serve hot.  Can add cooked small shell pasta if desired.  Be creative and use other fresh veggies like zucchini or turnips.
