Italian Sausage Scaloppini

1 lb sweet or mild Italian Sausage

1 large zucchini (or 1 pound) diced

1 large onion diced

8 oz fresh mushrooms, sliced

1 large bell pepper diced

1 large can whole tomatoes (smashed up) 28 oz?

1 tbsp.  Minced garlic (in jar)

1 tsp.  Basil

½ tsp oregano

½ tsp salt

¼ tsp pepper

Preheat oven 350°.  Cut sausage into bit sized pieces, place in baking dish along with vegetables.  In a bowl crush/mash whole tomatoes and add seasonings.  Pour over meat and vegetables.  Cover tightly with aluminum foil and bake 1 hour.  (can be cooked on gas grill on low setting).

Serve over your favorite pasta.  I like shells or ziti.
