Microwave Chicken n Cheese (alias “Mindy’s Chicken”)

1 – 1 ½ pounds boneless chicken breast

8 oz fresh mushrooms sliced

(4 – ½ breast pieces)

1 stick butter or margarine

1 onion, diced

1 tsp. “Season All” Salt

2 chicken bouillon with 1 ½ cups water

8 oz Monterrey Jack Cheese shredded

corn starch for thickening gravy


Melt butter in 12 x 8 inch glass dish.  Add seasoning salt and onion to butter; arrange chicken breast in pan, coating both sides of chicken with seasoned butter.  Cover with plastic wrap and microwave on high for 6 minutes.  Turn chicken and add mushrooms, recover, microwave an additional 6 minutes.  Pour bouillon water into dish then drain off as much liquid as possible into saucepan.  Top chicken and vegetables with cheese microwave 2 minutes to melt cheese.  Thicken liquid to gravy.  Serve with white rice.
