Mom’s Meat Loaf

1 pound of each:  lean ground beef; ground pork; ground turkey or chicken (ground veal is good too)

2 eggs

2 cups Italian style bread crumbs

1 pkg. Beefy onion soup mix

1 tsp garlic powder

1 tsp salt

1/2 tsp pepper

Preheat oven 350°.  Mix all ingredients and shape into loaf.  Stick your finger in the middle of the loaf making a hole all the way through.  Place on rack in roasting pan and cook 1 1/2 hours or until the hole in center is closed…that means it is done.  May need to add a little water to bottom of roasting pan from time to time during cooking to keep grease for smoking up oven.  Remove loaf from oven; add water from mashed potatoes to pan; if there is a lot of lumps in drippings in bottom of pan, take a tea strainer, hold over sauce pan and strain drippings before you thicken with cornstarch for gravy.  This makes a nice smooth gravy.
