Murphy’s Irish Soda Bread

When we lived in Okinawa mom had a friend, Teresa Murphy who made this Irish Soda Bread that was wonderful.  She gave mom her recipe but she only made it once or twice.

4 cups flour                            

3/4 stick margarine

1/2 cup sugar                         

1 cup raisins

1 tsp salt                                 

2 eggs

1 tsp baking powder              

1 1/2 cup buttermilk

1 tsp baking soda


Mix dry ingredients together.  Cut margarine into mixture until small balls form.  Add raisins and mix.  Add eggs and buttermilk and work until dough forms.  Turn out onto floured surface.  Add more flour as needed to keep from sticking to surface.  Knead dough ten times.  Form round ball.  Press into well greased (buttered) baking dish.  Cut cross on top.  Bake at 325° for 60 to 70 minutes
