4 boneless skinless chicken breast halves
1/2 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon dried basil
1 Tablespoon butter
1 Tablespoon vegetable oil
Flatten chicken to 1/4-in. thickness. In a shallow bowel, combine bread crumbs, Parmesan cheese and basil. In another bowl, beat the egg. Dip the chicken into egg, then coat with crumb mixture. In a large skillet, brown chicken in butter and oil over medium heat for 3-5 minutes on each side or until juices run clear.
lower-cal variation: use plain bread crumbs, and didn’t use any oil. don’t flatten the chicken. Just coated it and put it in a baking dish with the melted butter in it. Bake it for about an hour at about 325…. or until done. Turn it over after about 1/2 an hour or 45 min.
