Sweet Potato Casserole

4-6 sweet potatoes

1/4-cup brown sugar

1 sticks butter/marg

1 tsp cinnamon

Topping:

1/4 cup flour

1 stick butter/marg

3/4 cup brown sugar

*3/4 cup oatmeal

1 tsp. Cinnamon

½ tsp. Nutmeg

¼ – ½  cup chopped pecans or walnuts

Peel and prepare sweet potatoes for like mashed potatoes.  When cooked, drain and mash with 1 stick of butter, brown sugar and cinnamon.  Place mashed sweet potatoes in casserole dish sprayed with pam.  Prepare topping: soften butter/marg then blend in brown sugar.  Combine flour, oatmeal, (*if you like you can use 1 cup flour and no oatmeal), nuts, cinnamon and nutmeg. Add to butter/sugar mixture until a crumbly toping is formed.  Sprinkle on top of potato until well covered.  Bake 350 until hot and top in browned (but be careful not to burn) approximately 30 minutes if baking immediately after mashing potatoes.  Can make the day before and refrigerate, just sit out at room temp 1 hr before baking, baking time approximately 45 minutes.

If you make too much topping, you can freeze the extra to be used later.  Great on top of canned apple pie filling for apple crisp!
