Vegetable—Cheese Manicotti

8 oz manicotti, uncooked

1 10 oz pkg frozen spinach, drained

1 cup shredded carrot

15 oz lite ricotta cheese

¼ cup chopped parsley

2 tbsp chopped fresh basil

1 garlic clove, minced

Pam Spray

1 cup Mozzarella Cheese Shredded

1 cup pasta sauce

Preheat oven 350.  Cook manicotti according to directions.  Combine spinach, carrot, ricotta, ½ cup mozzarella, parsley, basil and garlic.  Stuff manicotti with mixture.  Coat a 1e/9 inch baking dish with Pam. Spread ½ cup sauce on bottom of pan.  Arrange manicotti over sauce.  Top with remaining pasta sauce.  Cover.  Bake for 30 minute.  Remove from oven and sprinkle remaining mozzarella on top and bake covered for another 5 minutes until cheese is melted.
