Lazy Daisy Oatmeal Cake

1 1/4 cup boiling water

1 cup oatmeal

1 cup grown sugar

1/2 cup Crisco shortening

1 cut white sugar

2 eggs

1 tsp ea. Bake soda, cinnamon & vanilla

1/2 tsp salt

1/4 tsp. Nutmeg

1 1/2 cups flour

 

Pour hot water over oatmeal, stir and let stand. Mix and cream together brown sugar, white sugar, Crisco and eggs. Add baking soda, cinnamon, vanilla, salt, nutmeg and flour, mixing well. Add water/oatmeal mixture. Bake 350 for 25 – 30 minutes in 9 x 13 glass pan. Place topping over cake and put under oven broiler until coconut browns.

Topping: 1/4 cup margarine, 3 tblsp milk, 1 cup coconut and 1/3 cup chopped nuts. Mix all ingredients and top cake.
