Lemon Delight Cake

2 1/2 cups flour

1 1/2 cups sugar

3 tsp salt

3/4 cups orange juice

3/4 cups cooking oil

2 tsp. Lemon Extract

4 eggs

 

Preheat oven 325. Grease and flour 10” tube or 12 cup bundt pan. In large bowl combine all ingredients; beat 3 minutes at medium speed. Pour into bundt pan. Bake 40 – 50 minutes until toothpick inserted in center comes out clean. Remove cake from oven and sit pan on cooling rack. Prick cake deeply every inch with fork. Blend glaze ingredients until smooth. Spoon half of glaze over hot cake while still in pan. Let stand 10 minutes. Invert cake onto serving plate and spoon remaining glaze over cake. Sprinkle with powder sugar once completely cooled if desired. Can garnish with candy lemon slices on edge of plate with candy spearmint leaves.
