Peach Cobbler or Pie

Bisquick Mix                                      

1 3/4 cups sugar

1/4 cup flour                                       

1 tsp. Cinnamon

2 tblsp margarine or butter               

3 cups pitted and peeled peaches cut into wedges (about 3 or 4 large ripe)

2 tsp lemon juice

 For Cobbler: Combine sugar, flour and cinnamon.  Toss peaches with lemon juice; add sugar/flour mixture and coat evenly.  Place in glass baking dish 8 x 12; dot with butter.  Follow directions on Bisquick for drop biscuits.  Spoon on top of peaches.  Bake in preheat 425° oven.

For Pie: Follow above direction except place peaches and sugar/flour into piecrust; dot with butter.  Cover with top crust, making slits in top crust.  Fold top crust under lower edge, pressing on rim to seal; flute edge.  Cover edge with 3 inch strips of aluminum foil to prevent excessive browning.  Remove foil last 15 minutes of baking.  Bake until crust is brown and juice begins to bubble through slits, approximately 40 – 50 minutes.  Cool
