Homemade Waffle Batter

2 cups flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tblsp sugar

1/3 cup melted margarine

3 eggs separated

1 1/2 cup milk (2% or whole)

Combine dry ingredients. Combine shortening, egg yolk and milk then gradually add dry ingredients. Mix well. In a separate bowl beat egg whites on high speed until stiff. Fold stiffen egg whites into waffle batter. Pour batter onto hot waffle iron and cook until steam stops. (You will get a feel for this after awhile)
